1 Handful Spinach or Kale
1 Cup pre-cooked Red & White Quinoa (Merchant Gourmet or similar) Alternatively pre-cook quinoa yourself
1/2 Zucchini grated
2 small-medium cooked beetroot (diced)
4-5 Jarred Artichoke heart pieces (optional)
3-4 Cherry tomatoes (halved)
1/2 Avocado diced
1 TBS Feta or Goats cheese
1 TBS Mixed Seeds and Nuts
Optional to add chicken, boiled eggs or fish for animal protein if that’s your thing!
So…basically this salad calls for any combination of superfood ingredients you want to add. Choose your Dressing from the Delicious Dressings Recipe link.
Combine all salad ingredients in a large bowl. You may choose to add the dressing and mix through at this point or save it to serve on the side or drizzled over the top.
Transfer the salad into a Tupperware container – if you are eating on the go, or eat immediately as it is.
