1 just-ripe avocado, diced
1 medium tomato, or 6 cherry tomatoes roughly chopped
1/2 spring onion finely sliced
1 small clove garlic, crushed
Juice of 1/2 lemon
Himalayan salt and ground black pepper to season
½ tsp finely chopped red chili (optional)
Place avocado flesh in a medium bowl and mash with a fork until semi-smooth. Add all other ingredients (reserving a little of the green part of the spring onion, a little coriander and a little of the chilli for garnish) and stir to combine. Adjust seasoning to taste.
Serve with slices of German Rye or Sourdough bread, corn thins or rice cakes or for a lower carb option carrot or celery sticks.
