1 Slice of German Rye (or similar) Healthy Toast spread with organic butter
2 Eggs scrambled
2 On the Vine tomatoes grilled roughly 5-10mins on medium to high (until they start to split)
1 TBS Feta cheese to go on top of the tomatoes
½ Avocado sliced (or 2 TBS of homemade ‘Chunky Guaca’ (see Recipe)
1/2 cup Mushrooms (sliced) and
2 Handfuls of spinach stirfried together in a knob of organic butter and dash of crushed garlic
Arrange all cooked ingredients on your plate, drizzle with extra virgin organic olive oil, and season with Himalayan pink salt, black pepper and a dusting of dried oregano or herb of your choice. This dish is perfect to nourish you body and soul day or night!
