Ingredients
2 handfulls of baby spinach or other green leaves
1/4 avocado
1-2 medium or hard boiled eggs (optional)
2 TBSP mixed seeds
1 salmon fillet pre-steamed for 7-10mins with green pesto (or plain)
Method
Combine all ingredients in a bowl or on a plate.
Dress with Extra Virgin Olive Oil, Himalayan salt and black pepper
Option: serve with hot or cold salmon – the choice is yours.
