1 Medium Zucchini (spiralised, or grated)
1 Medium Carrot (spiralised, or grated)
4 Cherry or Heirloom tomatoes (sliced into 1/4s)
1 TBS pitted Kalamata olives, whole or sliced (optional ingredient)
1 Handful of fresh oregano or (1/2 tsp dried)
1 TBS Olive Oil
1 TBS Balsamic vinegar
1 Small or 1/2 large garlic clove (crushed)
1/4 red chili pepper (deseeded and chopped)
Pinch of Himalayan salt
First make the dressing by whisking together olive oil, balsamic and salt.
Then add the crushed garlic, chili and oregano to the dressing and whisk again.
Combine all salad ingredients in a bowl, cover with dressing, toss and stand for flavours to blend for 5-10 mins.
