Seriously, as in NO KIDDING this salad means business! When we think of salads often a sad piece of lettuce and a soggy tomato come to mind – well at least that’s what my clients tell me. This food-gasmic plate of goodness will change your mind friends!
Ingredients 2 handfulls of baby spinach or other green leaves 1/4 avocado 1-2 medium or hard boiled eggs (optional) 2 TBSP mixed seeds 1 salmon fillet pre-steamed for 7-10mins with green pesto (or plain) Method Combine all ingredients in a bowl or on a plate. Dress with Extra Virgin Olive Oil, Himalayan salt and black pepper Option: serve with hot or cold salmon – the choice is yours. SERVES: 1 PREP TIME: 5MINS COOK TIME: 7-10MINS
