Ingredients
1 cup overnight soaked cashew nuts or macadamias
1/2 cup raspberries (defrosted and juicy)
1/3 cup ground almonds
1/2 cup desiccated coconut (plus extra as an optional coating)
1 cup pecans or walnuts
1 tsp agave or organic maple syrup
1/4 cup organic dark chocolate chopped into tiny pieces
Method
Blend cashews/macadamias, raspberries and agave or syrup to make a sweet raspberry paste. Blend/food process pecans and coconut. Add ground almonds and process again to make dry mixture. Combine all ingredients together including the chocolate chunks
Make into mini balls (1.5tsp of mix) rolled in your palms.
Keep refrigerated so they hold their shape.
2 mini balls = 1 serving.
Tip
These are perfect for an after diner sweet fix! They will last for 7 days in the fridge or keep frozen for a month and turn them into’ ice-cream’ balls!
